Is it Possible to add Additional Fields in the Layout??

Hello,

We require some additional fields in the Order Release for Information purpose.

For this can we add additional fields in the layout or should we use the existing fields by changing the label name and give the attributes to them.

I'm not sure about these. Please help me with this.
Is this possible by Flexfields. can we create custom Flexfields for these fields??
